The 7 Best Drinks from Caribou Coffee (with Recipes!)

I love coffee shops!

I love walking into my favorite local coffee shop and seeing their marvelous selection of unique, handcrafted beverages.

But something I don’t love about coffee shops is that I get addicted to their seasonal drinks only to have the new object of my affection disappear from the menu once the season passes.

Sometimes, those coffee shops decide to bring my favorites back next year.

In many cases, they don’t.

One of the reasons I started this blog was to record my copycat recipes so I could continue enjoying my favorite coffee drinks even when they are no longer on the menu.

​And now, you too can enjoy your favorite coffee beverages at any time of the day, night, or year!

Aside from greater drink flexibility, making your own drinks at home also saves you time and money.

With skyrocketing prices everywhere, it’s never been a better time to try your hand at being a home barista.

Vanilla Oat Nog Latte

First up is my favorite drink of the Christmas season.

Although I’ve never been much of an eggnog fan, I adore this drink!

It’s creamy and comforting and has the ultimate blend of sugar and spice, which perfectly balances with fresh espresso.

This drink also comes together quickly with only a few staple ingredients.

And did I mention that it’s dairy (and egg!) free?!

Cranberry Dark Chocolate Espresso Shaker

This next one is an elegant drink that’s relatively easy to “shake” together.

You can use either fresh or frozen cranberries, a nice option since most stores don’t carry the fresh ones year-round. 

​Any of the espresso shakers requires a shot of espresso (or two!), but if you don’t have an espresso machine, no worries!

Pumpkin Chai

Caribou’s fall menu often features pumpkin drinks; this next one is so tasty!

I love this drink over ice, but you can also make a hot version.

​Homemade chai contains fresh spices with all the antioxidant benefits that you often don’t get with the coffee shop version.

You can also control how much sugar you add, and because the drink has real spices and pumpkin, don’t sacrifice any flavor.

Pumpkin Spice Latte

Is there anything that screams “autumn” like a PSL?

Although I believe Starbucks was the first to introduce the drink, all the big-name coffee shops have their own versions.

Similar to the pumpkin chai, my version contains homemade chai concentrate with real spices and pumpkin.

You can customize the drink by adding whatever type of milk you most enjoy.

Finish with a whipped cream dollop and cinnamon sprinkling for a truly indulgent fall drink!

Raspberry Green Tea with Bubbles

I fell in love with this next one a few years ago and couldn’t wait to create my own version. 

Although it takes a bit more time to make than other drinks on this list, it’s a delicious one you should try if you love the Caribou one!

And it’s one of the best ones for cooling off on a hot summer day!

Caramel Espresso Shaker

Coffee and caramel go together like peanut butter and jelly.

It’s a classic flavor combination that’s tough to beat.

And you can quickly whip one up in your kitchen with a few simple ingredients.

Make it once, and I guarantee you’ll be hooked!

Campfire Mocha

This last one is newer in my coffee copycat repertoire.

I have created a couple of other versions of this concept in the past, but I decided to try something completely new for this post.

To make the campfire mocha, you’ll need:

  • 4 tbsp finely ground coffee can substitute 2 shots of espresso
  • 3.5 cups hot water omit if you’re using espresso shots
  • 1 tbsp mini chocolate chips
  • 2 tbsp mini marshmallows
  • 1 cup creamy oat milk can substitute milk of your choice
  • ​whipped cream and extra chocolate chips/mini marshmallows for garnish
  1. Combine the coffee and hot water in a French press. Allow to steep for 10 minutes, then pour your “espresso” into a separate pitcher and store it in the fridge for up to 2 days.
  2. Combine the mini chocolate chips, marshmallows, and oat milk in a small saucepan. Heat over medium heat until the chocolate chips and marshmallows have melted and the milk is at your desired temperature.
  3. Fill your favorite mug halfway with your “espresso.” If desired, use a hand frother to add texture to the chocolate milk mixture and pour over the espresso. Top with whipped cream, mini chocolate chips, and marshmallows. Enjoy!
