Total Time 20 minutes mins
- 4 tbsp finely ground espresso
- 3.5 cups hot water
- 1 tbsp maple syrup
- 2 tsp brown sugar
- ¼ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ⅛ tsp ground cloves
- 1 tsp vanilla extract
- 1 cup creamy oat milk
- ½ cup oat creamer
Put the finely ground espresso in a French press and add the hot water. Allow to steep for 6-10 minutes before pouring your "espresso" into a separate pitcher for storage. You can keep the coffee in the fridge for up to 2 days.
Put the maple syrup in a small saucepan and heat over medium heat until the syrup becomes very thin.
Add the brown sugar and continue heating until the sugar has melted and the mixture has turned bubbly.
Add the cinnamon, nutmeg, and cloves. Stir and add the vanilla extract and both the oat milk and oat creamer until the mixture is heated to your ideal temperature. The brown sugar mixture will appear to harden when you add the cold milk but with additional heating, it should combine nicely.
Using a handheld milk frother, froth your "eggnog" mixture to your ideal consistency. Fill your mug halfway with the "espresso" followed by the steamed and frothed eggnog and enjoy!
