Instructions
Combine the granulated sugar and water in a medium saucepan over medium heat. While stirring occasionally, bring to a boil and then allow to simmer for about 5 minutes until the sugar completely dissolves.
Continue simmering, and add the cranberries. Stir occasionally and continue simmering until the cranberries have burst. This step takes around 8-10 minutes.
Pour the syrup through a strainer to remove the cranberry chunks and allow it to cook to room temperature. Once cooled, store the syrup in an airtight container in the fridge for up to 2 weeks.
Place the dark chocolate in a small glass bowl. Microwave for 30 seconds at a time, stirring in between, until the chocolate completely melts.
Pull 2 shots of espresso and combine with the melted chocolate.
Fill a cocktail shaker with ice and add 1-2 tablespoon of cranberry syrup and the espresso/melted chocolate mixture. Shake for 1-2 minutes and pour into your favorite glass.
