Skinny Vanilla Latte Recipe
Homemade sugar-free syrup and skim milk star in this Starbucks classic!

- ½ cup Stevia
- ½ cup water
- 2 tbsp vanilla extract divided
- 2 shots espresso
- 2 cups skim milk
- ice optional for iced version
Combine the Stevia, water, and 1 tablespoon vanilla extract in a small saucepan over medium heat. Continue heating while stirring until the Stevia has completely dissolved. This will only take a few minutes as the Stevia melts almost immediately. Remove from heat and gently stir in the second tablespoon of vanilla extract. Allow to cool to room temperature, then pour into a jar and store in the fridge for up to 2 weeks.
Pull 2 shots of espresso and pour over a tall glass filled with ice. Add the skim milk and 1 tablespoon of the sugar-free vanilla syrup (more or less depending on your taste preferences). Stir and enjoy!
If you prefer your latte warm, heat and froth the skim milk with the added sugar-free vanilla syrup. Combine with the espresso and enjoy!
